Caviar and Poppy Seeds
I use yellow corn tortillas in my cooking almost every day. They are a healthier alternative to most starches if you happen to be watching the white stuff. These strips are baked on a tray with some olive oil spray until crispy, then sprayed again and sprinkled with poppy seeds. The girls couldn't get them in their mouths fast enough. They do love a chip. Better these than their daddy's pringles
I had some Japanese eggplants about to fly south in the fridge so I roasted them up in the oven by halving them lengthwise and placing them on an oiled tray, cut side down, until shriveled and tender. I scooped out the flesh and whizzed it up with lots of lemon juice, lemon zest, salt, pepper and a smidge of crushed garlic. Some people call this dip poor man's caviar because of the eggplant seeds. Cute name, tasty dip.
